Course Description:
This course examines the nutritional needs of the individual. Emphasis is placed on the fundamentals of food production, kitchen and meal management, food groups and their preparation, and time and resource management.  English language arts, mathematics, science, and social studies are reinforced.  Family, Career and Community Leaders of America (FCCLA) competitive events, community service, and leadership activities provide the opportunity to apply essential standards and workplace readiness skills through authentic experiences.  

Course Outline:

Unit 1 - Food Choices & Health

Unit 2 - Kitchen Safety, Food Safety & Sanitation, Equipment and Procedures, Recipes, and Teamwork

Unit 3 – My Plate & Cooking Methods of Fruits/Vegetables, Dairy, Grains, Protein

Unit 4 - Baking Methods of Quick Breads, Yeast Breads, Cakes/Frostings

Unit 5 - Meal Service and Etiquette

Unit 6 - Meal Planning and Preparation

 

Format of instruction & assessment: 

Students will demonstrate knowledge of taught concepts & course objectives through various types of vocabulary & course objective tests/quizzes , PowerPoint presentations & notes, demonstrations, discussions, cooking labs, interactive activities, projects, home assignments, web-based projects, reading and writing activities, and self-evaluation.  Students need to be enrolled in canvas to view class announcements, PowerPoint lessons, and assignments online.

 Credential Exam

Students who have a grade of a B or higher in the course and on the teacher made safety and sanitation test are eligible to take the Safe Plates industry recognized credential certification exam.

 Grading: 

The North Carolina grading policy will be configured on the following scale:

 

                    90-100 A

                   80-89  B

                   70-79  C

                   60-69  D

                     0-58  F

The grade for this class will be broken down into the following categories:

Major Assessments (tests, major projects)                                                                       60%

 Minor Assessments (quizzes, class assignments, cooking labs)                            40%

                                                                                    (Semester Exam is 20% of semester grade)

*** You will take a required state-made final exam for this course.

There are no CTE final exam exemptions.

Course Materials and Resources:

  • Please create a “Foods 1” Google Folder in your WCPSS Google Drive and a “Foods 1” Folder on your computer Desktop. You should save all notes to study for tests and quizzes.  You should also save all completed assignments and projects in your Google Drive and/or your desktop folders until the quarter is over.  If a grade is incorrectly input by me, your saved work will be your proof of assignment completion. 
  • I suggest in your Google Folder and/or Foods 1 desktop folder, you create folders for each objective to organize your notes, projects, and labs.
  • Backup Storage: If you save work to your desktop Foods 1 folder, I recommend you back up (convert to google doc/presentation or flash drive) your work at least once a week so no work is lost.
  • Programs we will use in this course include: Canvas, Kahoot, Quizlet, Quizizz, Google Meet, Google Drive, Flipgrid, Padlet.

 

Attendance Policy:

 In observance of Panther Creek HS’s attendance policy, I will reach out to parents via phone or email concerning attendance when students have missed 3 or more days of class.

 

  • During remote learning and for PCVA students, daily attendance will be taken through daily bell work, participation in synchronous (live instruction) activities, and completion of asynchronous (non-live instruction) assignments.

 

 

Class Participation and Digital Citizenship Norms:

  • RESPECT - Treat every person in the class with dignity, kindness and respect at all times. As a professional, even if you do not always enjoy your team members, it is the expectation that you still act in a kind and professional manner.

 

  • ON TIME – Login into live instruction at the designated time (see Weekly Pacing Guide for live instruction times). Submit non-live assignments by the designated due date.

 

  • SAFETY and SANITATION- Safe Plates food safety procedures must always be followed when preparing food at home or school.

 

  • PCHS - Panther Creek High School rules and policies apply in this course. See the Student Handbook for guidelines.

 

  • POOR CONDUCT- If you, as the student, choose not to follow class expectations, a warning will be given for the 1st occurrence, a parent/guardian will be contacted for the 2nd occurrence, and parent contact/referral to administration for the 3rd occurrence. 

 

ONLINE COMMUNICATION/Live Instruction Expectations:

-ONLY students enrolled in the course may enter Google Meets. 

 

-Students should sign into Google Meet through their school ID. 

 

-Students should only communicate with teacher through school email, Remind, or their Canvas email.  

 

-When communicating online, use other’s first name when replying to posts.

-When typing comments, sending emails, or any other written communication, use direct and respectful language.  Please refrain from using sarcasm, slang, or all caps when typing.   Remember, your peers cannot see your body language or hear your tone of voice.  The words you choose to say and how you say them matter very much! If what you want to say is hurtful, leave it unsaid.

-Complement each other’s strong original postings/work.  Critique comments/work, not the individual.  Constructive/kind critiquing can help each of us to learn and grow.  The goal is to respond instead of react emotionally.

 

Plagiarism: 

Plagiarism or the copying of another individual’s words or ideas will not be tolerated.  This includes copying or using another person’s work in person or electronically.  If a student is caught plagiarizing, he/she will receive a zero on the assignment and a referral to an administrator will be made.

 

Food Labs

  • Food Labs are an important part of the Food and Nutrition 1 course. This semester, there will be optional cooking lab opportunities during remote learning that are connected to the course content. 
  • For safety reasons, a parent or guardian MUST be present when you are preparing food labs.
  • I will provide a recipe for you to use on Canvas each week.
  • If you would like to prepare a different recipe, please contact me for approval.
  • If you believe you are unable to participate in a cooking lab while doing school at home, please contact me to discuss your circumstances so we can figure out how to address your needs.
